Mega chocolate fudge cake (Jamie Oliver)


Today I want to show you how to cook chocolate cake. But first we need to make fudge. You can cook this cake without fudge if you want. 

Fudge

•397g Nestle Carnatiin Condensed Milk ( I used Caramel)
•150ml milk
•450g sugar
•115g butter

 Put all ingredients in the pan. Melt every on low heat. Keep stirring all the time and mix.

 
 Put baking(cooking) paper in the dish before it bubbles. When it bubbles stir for 10-15 minutes then take off heat and whisk (10 minutes by hand and 2-3 with electric). Pour fudge mixture into the dish. Add whatever you like (nuts, fruit, decorations). Put it into the fridge until it’s firm (you can cut it). 3-4 hours. 



 For cake I used half of ingredients. With fudge what I’ve got I made 3 cakes. If you what to do the same just use half.

Mega (very big!) chocolate fudge cake 

•200g dark chocolate (70% cocoa)
•175g butter
•120g soft brown sugar
•100g blanched almonds (chopped)
•2 tablespoons cocoa powder 
•a pinch of salt
•4 eggs
•150g self-raising flour
•100g fudge
•splash of milk
•cream or ice cream 

 Preheat the oven to 160 C/320 F/Gas 2. In the bowl add the butter and cooking chocolate and put in into the microwave. Be carful. When butter start to melt mix it with chocolate. When the chocolate starts to melt just mix it with the butter. Wait for minute. The butter is hot and will easily help the chocolate to melt.


 
 Than add sugar, almonds, cocoa powder and salt and whizz until smooth. Crack your eggs. 










 Whizz again until smooth. Get a deep baking dish roughly 25x25 (for big cake). I used small. 









 Place the baking (cooking) paper into the dish and add cake mixture. Cut the fudge into pieces (size up to you) and sprinkle these over the top of the cake mix, pushing any larger pieces down into the mixture. Put your cake into the preheated oven and cook for approximately 18-20 minutes. Time can depend on which dish you have used. Set a timer to 15 minutes. 
 After this time, shake the dish and if the mixture moves,   you need more time. When you’re happy the cake is cooked you can probe the mixture with a skewer. Ideally your cake should be firm on top and moist inside. 

Served hot with ice cream.
